This variety of grape is the hero of Santorini where it thrives in the volcanic ash. It’s grown all over Greece but can also be found in Australia. Sometimes blended with Sauvignon Blanc, Sémillon, and Malagousia.
COLOR:
Light Bright Yellow
SMELL:
Distinct lemon/citrus, mineral and floral notes. Sometimes smokey and salty.
TASTE:
Very dry and high acidity with lots of mineral, citrus flavours with floral notes.

Grape ages well. Few producers experimenting but result is controversial.
FOOD PAIRING:
Grilled Fatty Fish and Oysters
VARIATION:
Nykteri (Minimum 75% Assyrtiko and aged in oak minimum 3 months)
FUN FACT:
Assyrtiko is very high in acidity and used in making the very sweet but lovely VinSanto wines. (51% minimum)
